no carb meatballs

ingredients

2 lbs ground beef
1/2 cup ground almonds
1 tbsp lemon pepper
1 tsp ground rosemary
1 tsp dry parsley
1 tsp salt
2 eggs
1 25-oz jar vino de milo tuscan merlot sauce
olive oil

directions
  1. In a food processor, coffee bean grinder or blender, grind together the lemon pepper, rosemary, parsley, and salt.
  2. Blend in by hand the ground almonds until thoroughly mixed.
  3. Mix in the ground beef and blend with your fingers until completely mixed.
  4. Let rest covered in the refrigerator until 20 minutes prior to serving. (Can be made the day before)
  5. Remove the meat mixture from the refrigerator and mix in the eggs completely.
  6. Heat a deep sided skillet or saute pan with 2 tbsp. of olive oil.
  7. Place the meatballs into the oil, and cook over medium heat.
  8. Turn the meatballs as each side browns.
  9. Once all sides are brown, pour the jar of Vino de Milo Tuscan Merlot Sauce over the meatballs and heat over a low flame for 10 minutes. Serve immediately.
