ingredients

1 lb pasta -- rotini, bowties, etc.
4 cups chopped fresh vegetables (such as radishes, green onions, bell peppers, peas, broccoli, red onion)*
1/2 cup parmesan or mozzarella cheese (optional)
1/2 8-oz jar vino de milo pomegranate port dressing & marinade
salt & pepper

*also: try adding dried fruit, such as chopped figs, raisins, or cranberries

salad - serves 4

directions
  1. cook pasta according to package directions; rinse in cold water thoroughly. set aside.
  2. in a salad bowl, mix all veggies and cheese. add pasta and toss.
  3. pour in 1/2 bottle vino de milo pomegranate port dressing & marinade. mix thoroughly.
  4. add salt & pepper to taste.
  5. refrigerate until ready to serve.
